Sea kelp is a common underwater plant with a vibrant green color and an impressive mineral content with a salty taste. Since Kelp is so common, it is important to make sure that yours is collected from unpolluted waters such as Hawaii, Canada and Iceland. Kelp is an excellent addition to any diet and is the perfect source of Iodine and b12, both of which are rarely encountered in land plants.

Kelp is wonderful for two important reasons, the mineral Iodine and the vitamin B12. Most Americans are deficient in the mineral Iodine which is necessary for the proper functioning of the pineal and thyroid glands. A proper functioning thyroid is key to a working immune system. Vitamin b12 is very rare and virtually no land plants contain this vitamin. b12 plays a key role in the normal functioning of the brain and nervous system as well as energy production. Kelp is great with any dish and carries with it a salty taste that compliments soups and salads and makes a wonderful nutrient source in a green smoothie or even eaten directly!
Kelp contains so much more Iodine than we are used to that it is recommended to consume it off and on to prevent an imbalance in your thyroid. Some cultures consume 2000% of our recommended Iodine intake and suffer no ills, however this may be in part to a completely different diet than we are used to. Please talk to your doctor if you intend to supplement with more than a small amount of kelp periodically, or if you have thyroid issues.
