Assam is a dark and malty black tea that is heavily oxidized, lending it a flavor and caffeine profile resembling that of coffee. Assam is a popular type of black tea originating in India, coming from the Camellia sinensis var. Assamica cultivar of tea plants. Black tea and especially assam is more heavily oxidized than green or white teas, giving them a toasted flavor with less tannic astringency, as well as a higher caffeine content.
